These Australian Wagyu Beef Filet Mignons have a graded BMS of 4-5. Each box includes 6 steaks, approximately 6 oz each (2.25 lbs total), vacuum packed in pairs for convenience.
The Beef Marbling Score (BMS) measures the amount of intramuscular fat, with higher scores indicating more marbling. A BMS of 4-5 is a moderate level of intramuscular fat that provides a nice balance between richness and affordability. Perfect for fine dining and special occasions, these filet mignon steaks are best prepared by pan-searing or grilling to achieve a delicate crust, or sous vide followed by a quick sear for precise, tender results.
