A rare cut with cult status among chefs, the Iberico Pork Pluma is a feather-shaped muscle taken from the end of the loin of the prized Spanish Iberico pig. Heavily marbled with fine intramuscular fat, this cut delivers an exceptionally tender, juicy texture and a rich, buttery flavour that sets it apart from other pork. Each package includes approximately 1.2 lbs, with the number of pieces varying per pack.

Best enjoyed medium-rare, sear it hot and fast on the grill or in a cast iron skillet to lock in the juices. Let it rest before slicing.
